1) Pull all tickets I am watching into a list --> Freshdesk provides a default ticket list view"Tickets I'm watching" (Tickets tab > Hamburger - Three horizontal lines option) to get the list of tickets where you are added as a watcher.
2) Is it possible to set up an automation based on tickets where I am the watcher? --> I'm afraid this is not possible as such. However, you can make use of tags/ticket fields to identify watcher tickets and set up automation accordingly.
3) Could I automatically add a tag to a ticket when I am added as a watcher? --> You can add tags automatically when you use automation to add watchers for tickets. Refer to the sample screenshot below for your reference:
