It is not possible to edit the priority field (cannot be deleted or archived) as it is a default field and a part of our structure. 

Furthermore, the priorities are tied to the SLA policies and are hard coded into the Freshdesk system.

However, you can create a custom field with your desired values, but it won't have the same functionality.
